Okay, so I grew up consuming artichokes – my household lived not removed from Castroville, California, they usually had been a daily a part of dinner for me. So after we opened Pacific Customary in Portland, with a meals menu that serves as a tribute to West Coast cooking, I knew I needed to put a steamed, chilled artichoke on the menu.
