Peach Melba is a traditional dessert created by August Escoffier for the Australian opera singer, Dame Nellie Melba. It is a mixture of peaches on vanilla ice cream with a Raspberry Coulee (sauce) topped with slivered almonds.
Sadly, it has gone out of vogue as a most popular dessert and that is actually a disgrace as a result of it is completely scrumptious. It is even higher as a cocktail. Tart raspberries and candy, juicy peaches are a superbly balanced mixture complemented by creamy vanilla ice cream and the nutty crunch of toasted almonds and I’ve achieved simply that beneath.
